Ingredients

  • 2 ripe avocados
  • 4 eggs
  • dash of salt

Instructions

  • First, set the oven to 400 degrees. Quick tip - I used convection and next time I think I'll just stick to standard bake. You pick.
  • Up next, time to cut the avocados. Take out the pit and then spoon out a bit extra. You'll see the egg on the left has a bigger pocket for the egg - that's what you're looking for.
  • Crack the egg and let about 60-70% of the egg white fall off into a small bowl. Put the yoke and a bit of the white into the avocado pocket.
  • Bake for 15-20 minutes.
  • Done! Add a dash of salt and hot sauce if you like.
  • Eat up while they're warm.
