Oatmeal Chocolate Chip Cookies

Oatmeal chocolate chip cookies - main reason, I had oatmeal that's not gluten free that I wanted to use up non gf oatmeal, thus, this recipe. The downer part, I made them for the wrong group of people.
Let me explain. Once a month I meet with a committee and there are about 15 of us - this time I asked if I could bring the snacks and that I wanted to make them. The whole reason was to try out this recipe and maybe get a little feedback. It was agreed and I was excited. I showed up, cute little box in hand and the chair person has bought donuts - on top of that, only 5 people showed up. One cookie was eaten. Sad face Ali over here. Solution? Drive by work and drop them off. I walked in the door and like little kids my staff had their hands in this box I was carrying. Oh - so good. Grab me one. Ali - save me one, please! I never told them that these were 'shunned' cookies, they didn't care - they ate them up.

Ingredients

  • 1 1/3 cups of cake flour
  • 1 cup of oats
  • 1/2 cup of chocolate chips and chopped pecans
  • packed 1/2 cup of white and brown sugar
  • 1 egg
  • 1/2 cup of butter
  • 1 teaspoon of vanilla

Instructions

  • First - set the oven to 350 degrees. Now gather all of your ingredients.
  • Next, mix the first 6 ingredients together in a bowl. Then, add in the egg, butter, and the vanilla. Mix well. I know it seems odd to mix the dry ingredients first, but for some reason it works in this recipe.
  • Then, add in the egg, butter, and vanilla. Mix well.
  • Roll into 1 inch balls and bake at 350 for 8-11 minutes.
  • Done - let them cool and then eat up.
