Ingredients

  • Ingredients:
  • 1 cup of quinoa uncooked
  • 6-7 cups of chopped kale about 1 large bunch
  • 1 small red onion
  • 2 cups of black beans
  • 1 cup of corn
  • Dressing:
  • 1/4 cup of cilantro
  • 1 clove of garlic
  • 1/4 cup of lime juice sriracha and water
  • 1 teaspoon of agave syrup
  • 1/2 teaspoon of cumin
  • salt and pepper to taste

Instructions

  • First up, cook the quinoa.
  • Now, get that kale washed and chopped. Let it dry a bit while we make the dressing.
  • For the dressing, chop the cilantro and mince the garlic. Then, mix all of the ingredients in a dressing shaker and shake away. Let it sit.
  • Once the quinoa is cooked, mix it with the beans and corn. Then, add in the diced onion and chopped kale. Toss in the dressing and you're all set! I don't wait for the quinoa to cool down, it's good warm.
  • Eat up and enjoy.
