Going gluten free hasn’t been too much of an adjustment – it’s actually quite fun! These cornbread waffles are good, like super good. Let’s get started.

Ingredients

  • Bob's Red Mill Cornbread Mix
  • 1 egg
  • 3/4 cup of milk
  • 1/8 cup of oil
  • 1 tablespoon of olive oil
  • a cup of white and black beans
  • 1 teaspoon of chili powder and cumin
  • little can of green chilies
  • medium avocado
  • 1/2 a head of iceberg lettuce

Instructions

  • First up - gather your ingredients.
  • Mix 1/2 of the cornbread mix with the egg, milk, and oil. Set it aside to rest.
  • Plug in the waffle iron and let it heat up.
  • Time to get the loaded mixture ready. Heat the one tablespoon of olive oil and cook the beans with the cumin and chili powder.
  • Then add in the green chilies.
  • While that's cooking, shred the lettuce, dice the tomatoes, and slice up the avocado.
  • Once the waffle iron is hot, put in the cornbread mix. Be sure to push down so the thick dough spreads out. Let it cook.
  • Done.
  • Load it up with the mix and toppings and eat.
