Recipe: Cornbread Loaded Waffle

Cornbread loaded waffle. Yes, cornbread waffles; and loaded!

Going gluten free hasn’t been too much of an adjustment – it’s actually quite fun! These cornbread waffles are good, like super good. Let’s get started.

Ingredients

  • Bob’s Red Mill Cornbread Mix
  • 1 egg
  • 3/4 cup of milk
  • 1/8 cup of oil
  • 1 tablespoon of olive oil
  • a cup of white and black beans
  • 1 teaspoon of chili powder and cumin
  • a little can of green chilies
  • 1 tomato
  • medium avocado
  • 1/2 a head of iceberg lettuce

First up – gather your ingredients.

Mix 1/2 of the cornbread mix with the egg, milk, and oil. Set it aside to rest. Plug in the waffle iron and let it heat up.

Time to get the loaded mixture ready. Heat the one tablespoon of olive oil and cook the beans with the cumin and chili powder. Then add in the green chilies. While that’s cooking, shred the lettuce, dice the tomatoes, and slice up the avocado.

Once the waffle iron is hot, put in the cornbread mix. Be sure to push down so the thick dough spreads out. Let it cook.

Done!

The middle will be soft and chewy – just perfect.

Load up, add some salsa if you wish, but eat up. So good.
