Seven Spring Salads

Salads are bright and full of nutrients and most of the time they’re tasty, too. These seven spring salads are the best way to welcome spring, although, you could eat them any time. Back in March of 2015 I ran this little series as a bright pick-me-up from a cold and dreary winter. The BBQ chicken salad is a sure hit and I really like the spinach salad, too. Add some grilled chicken and you’ve gone from a light side salad to a hearty meal. The fresh citrus dressing on the spinach salad is so good that I often make extra and eat it with snap peas or dip cucumber into it. That good – and easy to make.
