This protein rich chickpea salad is delicious and quick. Make on a Sunday night and you’ve got lunch for a few days! With a bit of spice in the dressing, this chickpea asian salad is full of flavour.

Ingredients

  • 1 can chickpeas
  • 1 can black beans
  • 1 can corn
  • 1 red pepper
  • 8 green onions
  • 3/4 cup of sunflower seeds
  • Dressing
  • 1/2 cup of soy sauce
  • 2 tablespoons of sesame oil
  • 2 tablespoons of rice wine vinegar
  • 4 tablespoon sesame seeds
  • 1/2 tablespoon of red pepper flakes

Instructions

  • This dressing is the same one I used in my <a href="https://3ten.ca/recipe-quinoa-asian-salad/" target="_blank" rel="noopener">Asian Quinoa Salad</a> - you should try it, too, if you haven't yet.
  • First - gather all of your ingredients.
  • Next - empty and rinse your chickpeas, corn and beans.
  • Then, cut your red peppers and onions.
  • Put in a bowl and mix well. Mix up the dressing. Done!
