Chickpea Asian Salad
This protein rich chickpea salad is delicious and quick. Make on a Sunday night and you’ve got lunch for a few days! With a bit of spice in the dressing, this chickpea asian salad is full of flavour.

- 1 can chickpeas
- 1 can black beans
- 1 can corn
- 1 red pepper
- 8 green onions
- 3/4 cup of sunflower seeds
- Dressing
- 1/2 cup of soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of rice wine vinegar
- 4 tablespoon sesame seeds
- 1/2 tablespoon of red pepper flakes
This dressing is the same one I used in my <a href="https://3ten.ca/recipe-quinoa-asian-salad/" target="_blank" rel="noopener">Asian Quinoa Salad</a> - you should try it, too, if you haven't yet.
First - gather all of your ingredients.
Next - empty and rinse your chickpeas, corn and beans.
Then, cut your red peppers and onions.
Put in a bowl and mix well. Mix up the dressing. Done!
