Egg Casserole

This morning my husband was sleeping in – it was his turn! I was up early with the dogs and I wanted to cook breakfast for us…but, I didn’t want my husband to wake up to a messy kitchen. So, what a better way to enjoy breakfast than an egg casserole! I popped it in the oven and let it cook while I cleaned up – easy easy! Onion and turkey bacon are a perfect pair and adding jalapeño havarti cheese made it so delish!

Ingredients

  • 8 eggs
  • 1 white onion
  • 4-5 strips of turkey bacon
  • 1/2-3/4 cup of cheese
  • 1/4 cup of milk
  • salt and pepper

Instructions

  • Sauté the bacon and the onions together in a bit of olive oil. While they are sizzling up, grate the cheese and mix the eggs, milk and cheese together.
  • Be sure that the bacon and onion mixture get nice and dark, they'll add so much more flavour that way!
  • Add the bacon and onion mixture to the pie pan and then gently pour over the egg mixture - be gentle, otherwise you'll disrupt the bacon and onions and they'll migrate to the outside.
  • Bake at 350 degrees for 40-45 minutes.
  • Cut a slice and enjoy! PS - it's good cold, too!
