Recipe: Egg Casserole

This morning my husband was sleeping in – it was his turn! I was up early with the dogs and I wanted to cook breakfast for us…but, I didn’t want my husband to wake up to a messy kitchen. So, what a better way to enjoy breakfast than an egg casserole! I popped it in the oven and let it cook while I cleaned up – easy easy! Onion and turkey bacon are a perfect pair and adding jalapeño havarti cheese made it so delish!

Ingredients

  • 8 eggs
  • 1 white onion
  • 4-5 strips of turkey bacon
  • 1/2-3/4 cup of cheese
  • 1/4 cup of milk
  • salt and pepper

Sauté the bacon and the onions together in a bit of olive oil. While they are sizzling up, grate the cheese and mix the eggs, milk and cheese together.

Be sure that the bacon and onion mixture get nice and dark, they’ll add so much more flavour that way!

Add the bacon and onion mixture to the pie pan and then gently pour over the egg mixture – be gentle, otherwise you’ll disrupt the bacon and onions and they’ll migrate to the outside.

Bake at 350 degrees for 40-45 minutes.
