Peanut Butter Chocolate Ice Cream Sandwiches
Peanut butter and chocolate, all rolled up in an ice cream sandwich - yes, please!

- 1 1/3 cup Peanut Butter
- 3/4 cup sugar
- 2 eggs
- 1 tablespoon Vanilla
- I sometimes add chocolate chips
- Your favourite ice cream President's Choice Chocolate Crunch!
Set the oven to 350 degrees.
Mix all ingredients and roll into balls - then flatten with a fork.
Bake for 13 minutes - keep an eye on them...you don't want them too soft, otherwise they'll crumble. Also, be sure to let them cool before you assemble the sandwiches.
Soft cream works best - I just let mine sit on the counter for about 3 minutes before I start scooping.
Scoop, scoop (I like this word...) onto the cookie and sandwich it together.
Eat right away...or pack up in parchment paper and freeze for another day!
Make a mess and eat it all!
