Peanut Butter Chocolate Ice Cream Sandwiches

Peanut butter and chocolate, all rolled up in an ice cream sandwich - yes, please!

Ingredients

  • 1 1/3 cup Peanut Butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tablespoon Vanilla
  • I sometimes add chocolate chips
  • Your favourite ice cream President's Choice Chocolate Crunch!

Instructions

  • Set the oven to 350 degrees.
  • Mix all ingredients and roll into balls - then flatten with a fork.
  • Bake for 13 minutes - keep an eye on them...you don't want them too soft, otherwise they'll crumble. Also, be sure to let them cool before you assemble the sandwiches.
  • Soft cream works best - I just let mine sit on the counter for about 3 minutes before I start scooping.
  • Scoop, scoop (I like this word...) onto the cookie and sandwich it together.
  • Eat right away...or pack up in parchment paper and freeze for another day!
  • Make a mess and eat it all!
