Toasted Bacon and Hummus Sandwich
The toasted bacon and hummus sandwich was born out of left over items in the fridge! This sandwich is perfect for make ahead lunches, or a weekend lunch. The key is good bread and a flavourful hummus. Okay, let's get assembling!

- 4 slices of bread Simple Promise, white rustic
- 6 slices of turkey bacon
- 6 tablespoons of spicy hummus
- large, ripe avocado
- 1/4 head of lettuce
- pickles for garnish
First up, drop the bread in the toaster and fry up the bacon. I like toasty bread, so I usually drop once, then cook the bacon, then when the bacon is ready, I drop the toast for about a 1/2 cycle.
Next, time to assemble. Spread about 1 1/5 tablespoons of spicy hummus on each slice of bread. Then, top each side with lettuce. I cut the lettuce to fit the bread (not shredded or chopped, but trimmed to size).
For the avocado, smash 1/2 an avocado onto one slice of bread for each sandwich. Lastly, top the avocado with the bacon and close each sandwich up with the other slice of hummus and lettuce topped bread.
Slice and eat.
