Cilantro Vinaigrette

Cilantro vinaigrette – I love cilantro, and not only is it fun to say in funny ways (silly-ant-ro) – it’s also incredibly healthy, and it tastes great! Okay, let’s make this quick and easy blender dressing to serve up on some delicious salads this summer.

Ingredients

  • 1 bunch of washed cilantro (no stems)
  • 1/2 cup of extra virgin olive oil
  • 1 tablespoon of white vinegar
  • 1 tablespoon of lime juice
  • 1 teaspoon of minced garlic
  • large dash of chipotle chili flakes
  • salt to taste

Instructions

  • First, wash and cut the bulk of the stems off of the cilantro. Then, add all of the ingredients into the blender. The chipotle chili flakes are the best part since they add in some smokiness and add depth of flavour.
  • Then, blend away – if it’s not running smooth just yet, pump the blender up higher. If needed, add a tablespoon of water at a time until it’s well blended. I don’t usually have to add water, since I put the cilantro in freshly washed, but not totally dry.
  • That’s it – so quick and easy! Dish out and serve over your favourite salad. This loaded salad would be delicious with this cilantro vinaigrette. It’s even good on tacos!
