Recipe: Gluten Free Pumpkin Waffles
Gluten free pumpkin waffles – why not? Just because it’s not fall doesn’t mean you can’t use pumpkin. The holidays were a blast – I got to spend time with my husband and my in-laws, oh, and my adorable pups. They are so precious. Okay, back to waffles. These waffles hold up well in my waffle iron – I’ve tried recipes that simply clump and make a mess (then I usually turn the recipe into pancakes). So, here we go! Ingredients 3/4 cup of pumpkin…

Project: Christmas Recap
Christmas recap – this is a little throwback to some of the recipes and projects I’ve done in the past. This year, I’m taking the holidays a little slower and not focused so much on making things, but rather spending time with my husband and my two dear puppies who most likely won’t be around too much longer. My heart is full and things are great! Christmas Recap Just because I’m slowing down, however, doesn’t mean we can’t enjoy a few favourites, right? In 2013…

Project: Junk Drawer
Junk Drawer Getting it organized for less than 10$. Total score. This project has been on my to-do list for quite some time and I’m happy to finally cross it off. First, a picture of the completely messy drawer. Everything just shoved in there with no home – all feeling lost. I wanted some containers to keep things in place and I didn’t want to spend a lot of money, so I hit up the dollar store. What I did, however, was take measurements of…

Molasses churro cookies on this fine Sunday! What did you do this weekend? These cookies are chewy, filled with molasses love and are gluten free, ta-boot! Let’s bake up. Ingredients 2 cups of almond flour 1/2 teaspoon of baking powder 1/4 teaspoon of salt, cinnamon, nutmeg and all spice…

Recipe: Coconut Curry Soup
Coconut curry soup – just one cutting board and your crockpot then you’re on your way to this wintery soup. It warms the house and your belly. Try it today! Oh, and it’s gluten free, total bonus. Ingredients 500ml of vegetable stock 800ml of coconut milk (not the light kind – it’s too watery) 2 tablespoons of curry paste, soy sauce and brown sugar 3 tablespoons of peanut butter large red pepper white onion 1 tablespoon of fresh ginger 2 large chicken breasts 1 1/2…

Recipe: Roasted Butternut Squash Salad
Roasted butternut squash salad – basically this is roasted butternut squash stuffed with avocado, feta cheese, toasted almonds all in a winter vinegar dressing. So good. It doesn’t look that pretty, but it sure tastes great. This salad uses the same dressing for the quinoa fall salad I made a few weeks ago. It’s one of my new favourite dressings. Okay, time to roast up! Ingredients 1 medium butternut squash 2 tablespoons of olive oil 1 large avocado 1/2 a cup of feta cheese handful…

Recipe: Penne Lasagna Bake
Penne lasagna bake – a slight take on my lazy lasagna from a couple of years ago. This recipe manifested out of my craving for lasagna and my lack of lasagna noodles. This is an easy week night dinner – let’s get started! Ingredients large box of penne pasta (I actually used 2 small boxes) bunch of spinach large white onion 2 tablespoons of olive oil 1 jar of your favourite pasta sauce 200g of mozzarella cheese 3 oz of cream cheese 750g of cottage…
