Recipe: Cauliflower Pizza Crust
Cauliflower is the new kale – remember when restaurants were quick to feature their kale salad, or a savoury side dish of sautéed kale? Well, the new kid is in town, and he comes in many colours – even orange and purple!
This pizza crust is great for those who don’t eat gluten or who are simply cutting back on wheat.
Not only is it delicious, you can eat more than two pieces without having to hit the gym extra hard!
Ingredients
- 2 lbs of cauliflower (about 2 heads)
- 500g of pizza mozzarella
- 1/2 cup of pizza sauce
- 1 egg
- 2 tablespoons of omega oil
- 1/2 teaspoon of oregano
The Crust
First – cut and wash your cauliflower – break it up into small florets.
Next – pulse it into a snow-like texture in your Vitamix (this appliance is super handy – get one if you don’t have one!) I did this in about 4 stages – that way I maintained the right texture.
Now – time to toast the cauliflower snow. In a big pan, over medium heat, add in 1 1/2 tablespoons of omega oil and cook the cauliflower snow for about 10-12 minutes. Once it’s done, lay it out to cool…about 10 minutes. Put all the snow in a dishcloth and squeeze out any excess moisture – put in a bowl and set aside.
Shred the pizza mozzarella. Don’t sneak a bite – not yet. I always sneak cheese whenever I cook with it – it’s super tasty.
Time to mix up the crust. Grab the bowl the snow has been sitting in. Add in 1 cup of shredded cheese, the egg, 1/2 tablespoon of oregano and some salt and pepper. Mix well.
Almost done!!
Lay out parchment paper onto your baking sheet. Plop down the cauliflower mixture and form into an even crust. I used a small spatula to even it all out. Oil the crust with the remaining omega oil.
Bake in the oven at 450 degrees for 10 minutes.
Meanwhile – cook your turkey bacon. Cut up into small chunks and sauté for about 8 minutes until crispy and cooked. Also, get the pizza sauce ready.
Pull your crust out of the oven.
Looks good, right?
Topping Time
Top with sauce.
So close!
Top with bacon and cheese – put back in the oven for 10 minutes or until the cheese is nice and melty.
Done!
Slice and eat.
Eat another piece – I know you want to!!
