Recipe: Chickpea and Quinoa Burger
Chickpea and quinoa burger for meatless Monday. Last time we made bean burgers and they were good. These chickpea burgers were just as tasty and filling. That’s the key, they fill you up.
Also – you’ll notice me holding up a bowl – looks so silly. Usually when I make recipes I do so during the day, or with a lot of light so that the pictures are well exposed. I was making us dinner and using the natural light from all the windows and then all of sudden a storm rolled in and turn my house so dark. We have a cedar home and it’s dark, or warm rather. Anyway, that’s why I’m holding up the bowl to the light.
Ingredients
- 1 cup diced yellow onion
- 2 minced garlic cloves
- 1 1/4 cup of cooked chickpeas
- 3/4 cup of cooked quinoa
- 1/2 red bell pepper
- handful of chopped cilantro
- 3 tablespoons of cornmeal
- 1/2 tablespoon of chili powder
- 2 tablespoons of olive oil
Topping
- 1 1/2 tablespoons of Sriracha
- 2 tablespoons of mayo
First – gather all of you ingredients. Next, in a large pan add the onions and garlic to 1/2 the oil. Cook until the onions are golden brown.
Time to mash the chickpeas. I put mine in the vitamix for a bit. You’re not making hummus, although my hummus recipe is good, but rather, you’re looking to break up the chickpeas so they’re a bit chunky.
Next, mix the mashed chickpeas with the quinoa, onion/garlic mixture, red peppers, and the cilantro.
Shape into patties and roll in the cornmeal.
Next, get that same pan you were using earlier and add in the other half of the oil and cook each side of the burger for 3-5 minutes.
Time for toppings.
Mix equal parts of Sriracha and mayo. Now you’ve got spicy mayo!
Top your burger with the spicy mayo and you’ll be all set.
