Recipe: Churro Pancakes
Cinnamon and sugar – yes, yes, yes. I love cinnamon and sugar. Today I was a bit lazy and although I felt like churro waffles, I didn’t feel like getting out the waffle iron. Silly, right? Then it came to me…churro pancakes! Yes!
If you’ve tired my churro waffles then you’re going to love this recipe – if you haven’t…the only reason I can think of is because you don’t have a waffle maker…well then, problem solved. Cook up.
Ingredients
- a cup of pancake mix – my homemade recipe is a pantry staple
- 1 egg (for pancake mix)
- about 1/2 cup of water (for pancake mix)
- 1/4 cup butter
- 1/2 cup sugar
- 2 tablespoons cinnamon
First – gather your ingredients and mix your batter.
Drop in the pancake mix into a warm pan – keep an eye on them. While the first ones are cooking (they always take the longest) get out a small dish and melt the butter. In a bigger, yet low bowl, mix together the sugar and cinnamon.
When the pancakes are done, put them on a plate. Brush with the melted butter and then dip in the churro mixture.
Be sure to coat both sides! Done.
Eat right away before they get cold.
