Cookie sandwich. Why not? About a week ago I made chocolate snicker cookies because the cake mix was on sale. Well, here we go again. It’s nice to make a little treat with a few quarters, right? Ya, for sure!

These are easy and simple. One drawback, the chocolate squishes out if you press to hard on your cookie sandwich. Still tastes great, though!

Ingredients

  • box of white cake mix
  • 1 egg
  • 1/2 cup of butter
  • 1 tub of chocolate icing

First up – gather your ingredients. Be sure the butter is soft otherwise it’ll be difficult to mix. I mixed it by hand, yet you can use your mixer if you wish. The dough will look crumbly, yet it’ll be great. Mix the first 3 ingredients together and combine well.

Form the dough into small 1 inch balls and then flatten them out to look like large silver dollars.

Bake at 350 degrees for 7-9 minutes.

Let them cool. Super important, otherwise your icing will melt all over the place – let them cool!

Fill a plastic bag with the icing and clip off the end. Then, in a circular fashion, ice the cookie and top it with another one.

Done!

The are best if they’ve been in the fridge for about 30 minutes first.

Ingredients

  • box of white cake mix

  • 1/2 cup of butter
  • 1 tub of chocolate icing

Instructions

  • Set the oven to 350 degrees
  • Mix the cake mix, egg and butter together - the dough will be crumbly, yet it'll work.
  • Form the dough into one inch balls, then press them out like large silver dollars.
  • Bake for 7-9 minutes.
  • Let the cookies cool for at least 15 minutes.
  • Take the icing and fill a plastic bag with it and then cut off the end.
  • Once the cookies are cool, ice one and top it with another cookie.
  • Stack and eat!
