Recipe: Pumpkin Spice Cookies
It’s fall – and what better way to celebrate October than with pumpkin spice cookies!
These cookies are healthy and pack a lot of flavour. Try them today (or tomorrow).
Ingredients
- 1 cup of flour and cake flour
- a teaspoon of baking soda and ground cinnamon
- 1/2 teaspoon of nutmeg, all spice and salt
- 6 tablespoons of salted butter
- 1/4 cup of sugar
- 1/2 cup brown sugar
- 1 1/2 cups of pure pumpkin puree
- an egg
- 1 teaspoon of vanilla extract
- 1 1/3 cups of oats
- 1/2 cup of walnut pieces and cranberries
First – gather all of your ingredients. Mix the first 6 together and set aside.
In your mixer, cream the butter and the sugars. Then, add in the pumpkin, egg and the vanilla. Blend well. Add in the dry ingredients, slowly. Then, gently stir in the oats, walnut pieces and cranberries.
Form into clusters and bake at 350 degrees for about 15 minutes.
Let them cool, then eat!
