Recipe: Red Salad
Brighten up your dinner with a red salad! Radicchio lettuce, beets, and radishes – this salad dish is sure to please.
Ingredients
- 3-4 beets
- 1 radicchio
- 2 red peppers
- 10 radishes
- 1 stalk of green onions
- your favourite vinaigrette (I used garlic)
First – peel the beets and roast them for about 1 hour or until cooked but still a bit firm. Cut into matchstick pieces.
Second, wash and cut the radicchio, slice the red peppers, radishes, and green onions. When you’re slicing the radishes, I suggest using a peeler or the straight edge on your grater – simply using a knife won’t get the radishes as fine as they should be – just a tip.
Put everything in a bowl, add salt and pepper and toss in your favourite vinaigrette.
