Recipe: Southern Sautéed Kale
Kale – southern sautéed and delicious! The health benefits of kale – high in vitamins and antioxidants. A great side dish for any warm winter meal.
Ingredients
- 1 bunch of kale
- 1/2 cup almond slivers and dried cranberries
- white onion
- 1 tablespoon of minced garlic
- 3 tablespoons of olive oil
- 1 1/2 cup of chicken stock
- 2 tablespoons of dijon mustard and rice vinegar
- 5 tablespoons of white sugar
Start off by sweating the onions in the oil – with the garlic. Keep the burner on low and let them cook for about 8 minutes. While the onions are cooking, tear and wash kale – set aside. Put the last 5 ingredients together in a bowl – set aside. Steam the kale – the easiest way to do this is to put it in a microwaveable safe bowl and put it in the microwave for about 4 minutes (until it’s soft and wimpy).
Once the onions are brownish add in the liquid (bottom 5 ingredients that you set aside) and let it boil for about 5 minutes. Add the kale – and let it simmer for about 20 minutes. After the kale is nice and soft and the cranberries and almonds for the last 4 minutes of cooking.
Add a bit of salt and pepper to taste and enjoy!!
