Recipe: Valentine’s Day Smarties Cookies
Valentine’s day cookies – with pink and red smarties! What more could you ask for? I know…they could be gluten free. I’ve yet to find a flour that works as well as cake flour – the only problem, I can’t eat them. My staff love them, though and I do heart them.
Okay – time to get baking. This is my basic and standard cookie mix with smarties. I’ve made them as chewy rainbow cookies and my favourite, white chocolate chip and candy corn cookies. Try them, too.
Ingredients
- 2 cups of cake flour
- 1 teaspoon of baking soda
- 2 teaspoon of corn starch
- 1/2 a cup of white and brown sugar
- 1 cup of salted butter
- 2 eggs
- 1 tablespoon of vanilla
- 1 1/2 cup of Smarties
First, gather all of your ingredients. The butter should be at room temperature and set the oven to 350 degrees.
Open all of your little boxes of Smarties. I couldn’t find just a bag, such a waste. Anyway, I did end up with enough.
Sift the flour, baking soda and the corn starch together and set aside.
Next, cream the butter, vanilla and the two sugars together. Add in the eggs one at a time. Then, add in the dry ingredients 1/2 a cup at a time. Now, carefully stir in the smarties.
Spoon out the batter and place in the freezer for 5 minutes. Then, bake at 350 degrees for 13-15 minutes. Squish an extra Smartie or two into each cookie – they’ll look better that way.
Done – and so festive!
Time to stack and eat.
Thanks so much for visiting and I hope you have a wonderful Valentine’s Day – and a fabulous long weekend, too – it’s Family Day on Monday! Whoo Hoo.
