Easter brunch 2025 – that’s right, it’s long weekend time which means a layout breakfast fit for brunch. This year we made waffles and went with some old classics, like poached eggs and avocado, as well as peanut butter and blueberries. The best part, some Canadian raw honey, creamed with lemon. So good!

Easter Brunch 2025
First up, the waffles. You pick what type of waffle you want to make, yet these gluten free fluffy waffles are perfect. I made them a bit smaller, about one large spoon full, that way they fit well with one poached egg – more like the size of an english muffin.
After you’ve got the waffles on the go (or staying warm in the oven) get out all the fixings. For us, that’s natural peanut butter, creamed lemon honey, and agave. We’ve also got pineapple and blueberries, and sliced avocados. Basically, a sweet and savoury option for the waffles.
Then, poach the eggs last. While the eggs are poaching, or before depending on your level of multi-tasking, get the table ready.
Once the eggs are done, lay everything out and eat up. You can keep the waffles warm in the oven and plate them last with the eggs, that’s the best way.
These eggs turned out well – nice and soft with full runny yokes. Perfection.
