Recipe: Baked Egg and Avocado
Looking for a morning pick me up? Full of protein and taste? Try this recipe – the baked egg and avocado – it’s a step up from avocado toast.
About a month ago one of the girls I used to work with did something similar to this which inspired this easy meal. The recipe is for two people – so make as much as you like according to how many people you have. I always find breakfast the most difficult meal to make for a group, this recipe puts that worry to rest.
Ingredients
- 2 ripe avocados
- 3 eggs (I used 4 and then had too much left over)
- 2/3 cup of old cheddar cheese – shredded
- drizzle of sriracha
- dash of cumin and chili powder
First – gather your ingredients.
Next – take out the pit of the avocados and scoop out a bit extra and either toss it or eat it. I ate it. Crack the eggs. Whisk the eggs. Add in 1/2 the shredded cheese and the cumin and chili powder. Pour into the pitted avocado.
Top with the other half of the shredded cheese and bake at 350 for 25-30 minutes.
Done!
Now add the sriracha drizzle and serve with turkey bacon.
So good! Enjoy this breakfast (or lunch) power meal.
