Recipe: Banana Chocolate Chip Nut Muffins
Banana nut muffins are delicious – this time, I added in some chocolate chips. These banana chocolate chip nut muffins are so yummy.
I started with my mom’s banana nut muffin recipe – it’s delicious all on it’s own. Oddly, though, here in Alberta I can’t get the tops as dark as she did in Ontario. Different oven, maybe. Different altitude or climate. Who knows. Either way, they taste just as good.
Ingredients
- 1 cup of sugar
- stick of butter
- 2 large eggs
- 3 large (or 4 small) super ripened banana (like almost all black)
- 2 cups of flour
- 1 1/2 teaspoons of baking soda
- pinch of salt
- 1/2 cup chopped walnuts and chocolate chips
First – you need to use the blackest bananas! Once they get really black I pop them in the freezer so I don’t get fruit flies. Plus, then I don’t have to wait a week for my bananas to ripen!
First – mix the first three ingredients. Then, mash in the bananas. In a separate bowl, add all the dry ingredients (not the nuts or chocolate chips). Fold in the dry ingredients and then gently stir in the chocolate chips and walnuts.
Fill up the muffin liners – fill them high!
Bake at 350 degrees for 24-27 minutes. Then, eat!
I always eat the bottom first and then leave the top, the best part, for last! Also, never ask me to share my banana muffin…it won’t end well.
