Recipe: Buffalo Cauliflower
Buffalo cauliflower – yes, just like buffalo chicken wings, yet with cauliflower. I know, I know, the cauliflower trend has passed us by, yet I wanted to give this a try. It’s quick, easy, and very little clean up. Okay, let’s get cooking!
Ingredients
- about 2 heads of cauliflower
- 2 eggs
- 1 cup of gluten free panko
- 1/2 cup of gluten free all purpose flour
- 1/2 cup of almond flour
- 3 teaspoons of garlic powder
- 2 teaspoons of paprika
- salt and pepper to taste
- about 1/2 cup of buffalo hot sauce
First, set the oven to 425 on bake.
Then, cut and wash the cauliflower – you’re looking for medium sized pieces. Grab a large freezer bag and put in all the cauliflower. If the bag is more than 1/2 full, work in two batches.
In a bowl, mix together the flours, panko, garlic powder, paprika and salt and pepper.
Add the egg to the bag and shake until all the cauliflower is evenly coated. Then, dump in the breading. Shake again. Ensure that everything is neatly covered.
Then, lay out all the coated cauliflower on a lined baking pan. Bake at 425 for 22-27 minutes.
After the 25 or so minutes, take out of the oven and pour the buffalo hot sauce on top. Try and cover as much of the cauliflower as possible, without creating large puddles of hot sauce.
Broil for 3-5 minutes and then serve with blue cheese or ranch dip.
Doesn’t it look so good? It’s tasty, and a fun alternative to chicken wings, especially if you feel like them and only have cauliflower in the house!
