Recipe: Buffalo Chicken Pizza
Buffalo chicken pizza – it’s gluten free and full of spicy. It’s like eating a chicken wing, but better, because it’s pizza!!!
This is perfect for Sunday football games, or watching MasterChef Junior. Man, those kids are quite the cooks, right? We’re in a bit of a competition with my brother and his wife for MasterChef Junior. We watched the first two episodes and used those as recruiting – then we each drafted a team of 10. Points are given to winners, and runners up – and then a certain allotment of points to team events. It’s fun and gives the show a bit more competition. We’re in the lead right now…but that could all change since 2 kids go home at a time. Okay, back to the pizza!
Ingredients
- lentil flour pizza crust
- buffalo wing sauce
- 2-4 chicken fingers (cooked)
- 200g pizza mozzarella
- 2 tablespoons of cornmeal
First, make your lentil flour pizza crust.
While the pizza crust is rising, shred the mozzarella and cut up the chicken fingers and set the oven to 500 degrees.
Be sure to pick your favourite buffalo wing sauce – it’ll give this recipe a bit of zing!
Time to roll out the dough. Get out your pizza stone and cover with the cornmeal – this will prevent the crust from sticking to the stone. Once the dough is rolled out, top with sauce, then the chicken finger bits, and then finish with the cheese.
Bake for 9-12 minutes until the cheese is starting to brown nicely.
Done. Let it sit for about 3 minutes and then cut.
