Recipe: Chickpea Asian Salad
This protein rich chickpea salad is delicious and quick. Make on a Sunday night and you’ve got lunch for a few days! With a bit of spice in the dressing, this chickpea asian salad is full of flavour.
Ingredients
- chickpeas, 1 can
- black beans, 1 can
- corn, 1 can
- 1 red pepper
- 8 green onions
- 3/4 cup of sunflower seeds
Dressing
- 1/2 cup of soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of rice wine vinegar
- 4 tablespoon sesame seeds
- 1/2 tablespoon of red pepper flakes
This dressing is the same one I used in my Asian Quinoa Salad – you should try it, too, if you haven’t yet.
First – gather all of your ingredients.
Next – empty and rinse your chickpeas, corn and beans. Then, cut your red peppers and onions. Put in a bowl and mix well. Mix up the dressing.
Done!
Eat a bowl and pack up the rest for lunch.
