Recipe: Cucumber and Dill Salad
Cucumber and dill salad time.
A fan of dill? I’m not a big fan of dill – I’ll pass on dill pickle chips all the time, yet dill in its fresh herb form is actually quite delicate. The flavour is mild.
Try this cucumber, dill, and almond salad before you write dill off completely!
Ingredients
- 1/2 a bunch of dill
- 2 cucumbers
- 500g of coconut greek yogurt
- 100g of chopped almonds
First – peel and deseed the cucumbers.
Thinly slice the cucumbers and chop the almonds.
Add in the greek yogurt and stir. Then add in the dill last and stir gently.
Add salt and pepper to taste.
Plate.
Eat.
Enjoy.
This recipe is best eaten right away. Although it’ll keep for a couple of days in the fridge, I find the cucumbers are best eaten fresh.
