Recipe: Green Sprinkle Cookies

Green sprinkle cookies – just in time for St. Patrick’s day! I made these same cookies, just with pink and red sprinkles back on Valentine’s day and they were delicious. Full of fun and a sweet little treat. Okay, let’s bake up.

  • 2 cups of gluten free flour
  • 1 teaspoon of baking soda
  • 2 teaspoon of corn starch
  • 1/2 cup of white sugar
  • a packed 1/2 cup of brown sugar
  • 1 cup of salted butter
  • 2 eggs
  • 1 tablespoon of vanilla
  • 1/4 cup of sprinkles

First, gather all of your ingredients. The butter should be at room temperature and set the oven to 350 degrees.

Then, sift the flour, baking soda and the corn starch together and set aside.

Next, cream the butter, vanilla and the two sugars together – I usually do this for at least 5-7 minutes. Add in the eggs one at a time. Then, add in the dry ingredients 1/2 a cup at a time and mix as little as possible.

In a separate dish – I used a pasta bowl since it’s flat and there’s a lot of room – mix your sprinkle combination together. Roll the dough into 1 inch balls and then roll in the sprinkles and press flat on a silicone lined baking sheet.

Bake at 350 degrees for 12-14 minutes. Then, let them cool for a few moments and eat up.

These green cookies are so good – you can use this recipe base for anything. Add in skor, or even Reese’s Pieces and bake up. The batch makes about 32 cookies and I’ll often freeze them in packs of two so we have a few sweet eats for the weeks to come. They’re so good cold, too!

Well, there you have it – green sprinkle cookies. I love sprinkles, it’s like the glitter of food. Oddly, I dislike glitter, though. It’s messy. Sprinkles, they’re just so fun to eat.

Okay – happy St. Patrick’s Day! Have a great one and I’ll see you again soon.
