Recipe: Loaded Sweet Potatoes
Loaded sweet potatoes – it’s like a fully loaded Mexican baked potato (oh, that sounds so good!). We had left over taco items and no shells, so I created this recipe on the fly. Let’s get cooking!
Ingredients
- 2-3 small sweet potatoes
- 1 pound of ground turkey
- a heaping tablespoon of tex-mex spice
- 2 tablespoons of grape seed oil
- jalapeño guacamole recipe
- blender tomatillo salsa
- greek yogurt
- 1/2 cup of shredded cheese
- hot sauce
- salt to taste
First, set the oven to 400 on roast. Then, wash the sweet potatoes and slice in half lengthwise. Rub the skin with about 1/2 a tablespoon of grape seed oil and sprinkle with salt.
You want to bake them for about 25-40 minutes until the inside is nice and tender.
While the sweet potatoes are cooking, add the rest of the grape seed oil into a cast iron pan and cook the ground turkey with the tex-mex spice and salt to taste on medium. Cook about 7-10 minutes until the turkey is cooked through.
Then, mash up the jalapeño guacamole and blend the tomatillo blender salsa. These two recipes are some of my favourites – full of flavour, packs a punch and brings so much freshness to a dish. In between checking on the sweet potatoes and stirring the turkey, shred the cheese and get out the other condiments – I like greek yogurt and hot sauce.
Once the turkey is done and the sweet potatoes are cooked time to load up.
Well, there you have it – loaded sweet potatoes – a quick and easy dish when you have taco topping leftovers and no taco shells (or, don’t feel like tacos again, but does anyone ever really not feel like tacos?).
