Recipe: Jalapeño Guacamole

Jalapeño guacamole – it’s a little twist on a Mexican classic. If you’ve been here before then you know I love Mexican food. I mean, it’s just so diverse! So, you’ve also know I love guacamole and have used it in a few different recipes. Well, a while back – I think November or December when we were in lockdown – I didn’t have tomatoes and since Bryce isn’t a huge fan of tomatoes, I thought, heck, I’ll substitute jalapeños instead. And that’s where the new guacamole recipe started. So, let’s guac up!

Ingredients

  • 4 large avocados (pealed and pitted)
  • 2 jalapeños
  • 1/2 a white onions
  • 1 clove of chopped garlic
  • a few dashes of sriracha
  • 3 tablespoons of lime juice
  • 2 tablespoons of fresh cilantro
  • salt to taste

First, wash all of your product and then thinly dice the jalapeños, onion and the garlic. Then, top with the sriracha and lime juice.

The acid in the lime juice will help temper the bitterness of the onions – even soaking them for 2-3 minutes while the avocados are prepped helps!

Then, cut the avocados and spoon out. Chop the cilantro and mash everything together – add salt to taste.

Dish out and serve.

Looking to prep ahead? Just make the ‘filling’ up to 24 hours before and add the avocados last minute! This will prevent browning and save on time.

There you have it – some spicy and flavourful jalapeño guacamole. It’s fresh, packs a punch and it’s perfect for non-tomato lovers. Plus, the jalapeños add some nice texture to the green dip. Be sure to give it a try the next time your grocer has ripe avocados.
