- 1 cup of vegetable broth
- 2 cans of corn
- a can of black beans
- 1 cup of salsa

- 1 red pepper
- 3 green onions
- a jalapeño
- a handful of cilantro
- 1 1/2 cups of shredded cheese
- 1 tablespoon of chili powder and cumin
First – gather all of your ingredients.
Next – chop the red onion, red pepper, jalapeño and the cilantro. Then, mix in the quinoa, vegetable broth, corn, black beans, salsa, chili powder and cumin – put it all in a 9×13 dish. Cut the chicken and push it into the casserole, covering it fully. Top with the shredded cheese. Save the green onions to top it at the end.
