Recipe: Skor Butter Cookies
Skor butter cookies are so good. And this recipe makes more than 4 dozen! Total holiday score. I love butter cookies and it’s hard for me not to simply devour them all, although being a recent celiac, it’s a bit easier to stay away now.
Okay, let’s get baking!
Ingredients
- 2 sticks of salted butter
- 1 cup of white sugar
- 2 teaspoons of vanilla
- 1 egg
- 2 1/2 cups of cake flour
- 1 heaping cup of skor bits
First up, gather all of your ingredients – be sure the butter is a room temperature. You’ll want it to mix well with all of the other ingredients. Cream the butter and sugar together well.
Next, add in the vanilla and the egg. Then slowly add in the flour 1/2 a cup at a time. Mix well. Once all of the ingredients are combined, stir in the skor bits.
Time to roll it up. This time I put the dough into two logs – I learned from the dark chocolate butter cookies.
Once they are rolled put in the fridge for 2-3 hours, yet no longer than 3 hours.
Set the oven to 375 degrees.
Unwrap the logs and cut into 1/4 inch pieces. Lay out on parchment paper or a baking mat and bake for 7-9 minutes. Watch the edges, you don’t want them to get too dark.
Done. Look at all of those skor bits, so melty and so good.
