Recipe: Tortellini Caesar Salad
Tortellini caesar salad. This is one of the quickest and easiest things to make for dinner. It’s filling, tasty and well, it gives you the impression you’re eating healthy…which you’re not, not really anyway.
Ingredients
- 1 pack (the big one) of fresh tortellini
- 6-8 cups of romaine lettuce
- 2 endives
- 4-6 artichokes
- caesar salad dressing (homemade if you like – this recipe is great)
- 3 tablespoons of parmesan cheese
First, gather all of your ingredients. Get the pot of water boiling and cook the tortellini. Cut the lettuce and wash it. Cut the endives and wash them. You’ll want to cut the endives a bit smaller than you cut the romaine lettuce, it just works better.
When the pasta is done cooking, rinse it off and set it aside.
In a large bowl add the romaine and the endive. Top with dressing and mix well. Oh, howe I love caesar salad dressing. I was lazy on this recipe and just used the store bought stuff. Slacker. Yes, it happens to the best of us.
Once it’s well mixed, add in the tortellini. Stir well.
Dish out and top with sliced artichokes and parmesan cheese.
That’s it. You’re done.
Eat up.
This salad is best fresh, yet in a pinch it’ll work as lunch the next day.

Ingredients
- 1 pack 350g of fresh tortellini
- 6-8 cups of romaine lettuce
- 2 endives
- 4-6 artichokes
- caesar salad dressing
- 3 tablespoons of parmesan cheese
Instructions
- Cook the pasta.
- Chop and wash the romaine.
- Cut and wash the endive - cut it a bit smaller than the romaine.
- When the pasta is fished cooking, drain it and lightly rinse with cold water then set it aside.
- Put the lettuce and endive in a large bowl and toss with the caesar salad dressing.
- Add in the tortellini.
- Dish out and top with parmesan cheese and artichokes.
