Easter brunch 2024! That’s right, it’s time to celebrate with some delicious eats. Freshness all around on this one. A lot of citrus, some soft eggs, and healthy fats. I love food and this brunch is a sure winner. Plus, you can make and prep a lot of things ahead of time. Okay, let’s get cooking!
Easter Brunch 2024
Did you see the two most recent breakfast salads I shared? Well, I shouldn’t say breakfast, since the cauliflower fritter salad is great with BBQ chicken or turkey burgers. Well, if you didn’t see them, they’re the star of this brunch. For the fritter salad I added jammy eggs to bring some added richness.
These eggs were cooked by adding at boiling for 6.5 minutes, so a little different than the recipe – yet cook to your desired doneness. Eggs are like salt, most people have preferences – more or less. Me, I’m more on the salt and less on the egg cook. Okay – here’s our brunch.
One awesome thing about both of these salads, and the eggs for that matter, is they hold well in the fridge if you have leftovers. I like the cauliflower fritter salad with warm tots, yet even cold for lunch the next day, they are delicious.
We had a pretty big breakfast! The lemony yogurt base of the fritter salad is so rich and creamy. Ah, so good! It’s even good as a dipping sauce for just the tots, or carrots, cucumbers, or sliced red peppers. As a dressing it’s well balanced with the peppery arugula.
