Recipe: Canada Day Cookies

Canada Day cookies! Happy July 1, 2020. Here is the best gluten free chocolate chip recipe bedazzled with white and red sprinkles. Okay, let’s get baking.

Ingredients

  • 2 cups of gluten free flour
  • 1/2 teaspoon of salt
  • 1 teaspoons of baking soda
  • 1/2 cup of cream cheese
  • 3/4 cup of salted butter
  • 1 cup of brown sugar
  • 1/2 cup of white sugar
  • 2 egg yokes
  • 1 tablespoon of vanilla
  • about 1 cup of chocolate chips
  • 10-15 chocolate melts
  • 3 tablespoons of sprinkles

First, sift the flour, salt and the baking soda and set aside. Then melt the butter. Cream the butter, cream cheese and the sugars together. Mix in the eggs and the vanilla, then slowly add in the sifted flour. Lastly, stir in the chocolate chips.

Wrap the cookie dough in plastic wrap and store in the fridge for at least 4 hours.

When it’s time to bake, set the oven to 375 degrees. Roll out 1 inch balls. Line a baking sheet with parchment paper and bake for 10-13 minutes.

Some – see the photo above, second from the left – are rolled in sprinkles before they’re baked. The rest are chocolate dipped and loaded up with sprinkles after baking.

Then, you can melt chocolate melts and top with sprinkles. I used white and milk chocolate and just added enough to get the sprinkles to stick.

These are some of my favourite since you get a bit of chocolate and sprinkles in every bite.

Now, here I used white on some and milk chocolate on others. You can certainly see and taste the difference!
