Recipe: Cauliflower Fritter Salad

Cauliflower fritter salad – it’s the perfect way to bring freshness and bite to salad time. This salad has a lemon garlic dressing which adds richness to the warm cauliflower fritters. Okay, let’s check out how to make this dinner time (or brunch!) salad. Time to cook!

Ingredients

  • 1 1/2 cups of plain greek yogurt
  • 2 teaspoons of grated lemon zest
  • 3 teaspoons of lemon juice
  • 1 large clove of garlic, minced
  • 1 tablespoon of extra virgin olive oil
  • salt to taste
  • bag of cauliflower tots
  • 1/4 of a red onion, thinly sliced
  • 2 cups of arugula
  • dash of olive oil and salt

First, the cauliflower tots linked above are good! You could of course make your own, yet that’s a lot of work. Right now, we’ve got a few projects on the go both at home and at work, so sometimes simplifying things is best. If you haven’t tried these PC tots, give them a go!

Heat up the oven and put the tots in to cook – they take about 15-17 minutes, so while they’re cooking, get the rest ready.

The dressing is the yogurt base – start there. Take the first six ingredients above and mix well. Combine the yogurt, lemon zest, lemon juice, minced garlic, and the olive oil. Then, finish with salt to taste. Next, grab your serving dish and lay out the dressing base.

Once the dressing is down, thinly slice the red onion. Add the onion and a arugula to a bowl and lightly toss in a dash of olive oil and salt. Lay neatly on the dressing base.

Salad Time

You’re just about done! Once the tots are crispy and done, top the salad with the tots and eat!

If you’re up for it, you can add poached eggs, jammy eggs, or even eat with flat roasted chicken. This dish is easily made ahead of time – just mix the dressing base, and then toss the arugula last minute while the tots cook. It’s a great summer BBQ salad, too.
