Recipe: Avocado and Egg Breakfast
Avocado and egg breakfast – packed with protein and healthy fats. It’s a sure fire way to start the day with some energy! Get cracking.
Ingredients
- an english muffin
- 2 eggs
- 1 avocado
- 2 tablespoons of cream cheese and salsa
- 1/2 tablespoon of coconut oil
First – gather all of your ingredients.
Next, we will make the southwestern cream cheese sauce. In a microwaveable safe bowl, mix the cream cheese and salsa together a bit. Microwave the mixture until the cream cheese melts. Combine well.
Time to get the avocado ready. Open it up, toss the pit, and mash it in a bowl with a fork.
Melt the coconut oil in a pan and cook the eggs. I pick sunny side up, yet do what you like.
While the eggs are cooking, toast the english muffin.
Now, get your plate ready and have your prepped ingredients ready to go.
First, put the southwestern cream cheese sauce on the english muffin. Then, top with mashed avocado. Top with the cooked egg and you’re done! This avocado and egg breakfast is so good – you’ll want to make it every Saturday.
