Recipe: Banana Oat Muffins
Banana oat muffins – they are gluten and sugar free. Healthy and a tab bit sweet. These are easy to make and good for a warm Saturday morning treat or even for a Monday drive to work. Let’s bake up!
Ingredients
- 1/4 cup of natural peanut butter
- 2 ripe bananas
- 1 egg
- 2 tablespoons of dark agave syrup
- 3/4 cup of quick oats
- 2 tablespoons of flax seeds
- 1 teaspoon of vanilla
- 1/2 teaspoon of cinnamon and baking soda
- 2 tablespoons of butter
First – gather all of your ingredients and set the oven to 375.
Time to make the batter.
Now, mix together the oats, flax seeds, cinnamon and baking soda. Combine well. Next, add in the peanut butter and the egg. Mix well. Lastly, add in the bananas, agave and the vanilla. Mix the batter so it’s all combined.
Let the batter sit for about 3 minutes. While it’s sitting, take your butter and grease up your muffin tins. This recipe will make about 12 – 16 muffins.
Spoon in the batter and cook for 10-12 minutes.
Done!
They don’t rise a lot, so if you want them to be super high muffins, then fill them right to the brim.
Let them sit in the tins for about 7-9 more minutes.
Tip them out onto a cooling rack.
Let them cool or eat up.
These muffins are so good. They will freeze well or you can keep them in the fridge for about 4-5 days.
