Recipe: Beet and Bean Wrap
Beet and bean wrap. I love beets, especially the beet stacks. Have you tried those yet? You need do after you make these wraps. You know that saying that you’re supposed to eat the colours of the rainbow? Well, beets help you meet that criteria for life. Oh, and they taste great, too. So good.
Okay…time to get our wrap on…let us get to it!
Ingredients
- 3/4 cup of cooked quinoa
- 2 tablespoons of canola oil
- 3/4 cup of red onion
- 2 1/2 cups of black beens
- 1 cup of grated raw beets
- a teaspoon of garlic, cumin and chili powder
- 1/2 teaspoon of paprika
- 2 tablespoons of flax seeds
- 1/2 cup of walnuts
- small handful of cilantro
- 1/4 cup of plain yogurt or grated cheese
First – gather all of your ingredients. Grate the beets, mince the garlic, and dice the red onion.
Spices, check. Nuts and seeds, check. Beets, check.
Put the oil in a pan and heat it. Once it’s hot, add the garlic, the onions, and the spices. Cook for about 4 minutes and then add the beans.
After about 4 minutes, remove from the heat. Mix the onion and bean mixture with the cooked quinoa, nuts/seeds, and the beets.
Grab a wrap and dish out. Top with yogurt or cheese and some cilantro.
Wrap up and eat.
So good – the nuts give it some texture and it’s so tasty! You’ll have to try it to believe me, trust me.
Well, hopefully you’re almost ready for the weekend – I know we’re excited. Some very good friends of ours are getting married on Saturday. So excited.
