Butterless cookies – how and why?!

I wanted to make cookies and I had no butter…augh. What to do – I had a lot of canola oil. Sure – let us try it.

Turned out super well. In fact, I got a lot of “wow…these are good” at work when I brought in the extras. Try them!

Ingredients

  • 1 cup of flour
  • 1/2 cup of cake flour
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of cocoa powder for colour
  • 1/2 cup of sugar
  • 1/4 cup of brown sugar
  • 1/2 cup canola oil
  • large egg
  • teaspoon agave syrup
  • a cup cinnamon chips, or butterscotch chips, or skor bits

I’m going to make 3 cookie ‘flavours’…so I tripled the recipe, using cinnamon chips in one batch, butterscotch in the other and the last one got skor.

First – mix the sugars, oil, egg and the agave syrup together. Next – mix the first 5 ingredients together in a bowl (all the dry ingredients). Slowly add in the dry to the wet ingredients. Mix well.

Then, add in your one cup of chips or bits. Stir well.

Bake at 350 degrees for 9-11 minutes.

Let them cool, then stack them up! Or eat, which ever you prefer.
