Recipe: Chicken Sausages and Peppers
Chicken sausages and peppers – one of the fastest freezer meals to prep! Plus, it’s full of heat and spice. Okay, let’s get cooking!
Ingredients
- Pack of chicken sausages (I used a 4 pack of PC brand)
- red pepper
- yellow pepper
- green pepper
- 3 jalapeño peppers
- large white onion
- 1 tablespoon of tex-mex spice
First, wash and cut all of your peppers. Looking for a little less spice? Then de-seed the jalapeños and that’ll temper the spice. I cut everything lengthwise since we eat these chicken sausages and peppers on corn tacos or on cheese buns. You could eat it over rice, which would be super good, too!
Once everything is cut up add it to the freezer bag. Oh, and I cut the sausages into quarters.
Then, once you’re ready for a quick and easy meal, dump this bag into the crockpot and cook on low for 6 hours.
If you put the crockpot on while you’re headed to work – just set it on delay for about 3 hours and you’ll be good. You don’t want this one to overcook for too long since then the peppers will turn to complete mush. If that’s the case, just stick to 3 types of onion and skip the peppers all together. Try white, yellow and red onions. Oh, that sounds so good, actually!
Easy, right? I know – it’s so quick and fast. Only takes about 15 minutes to wash, cut and then clean the cutting board.
Once everything is cooked, get out your rice, cheese buns or corn taco shells and eat up.
