Recipe: Monster Cookie Bars

Monster cookie bars are flour free – none, at all. Not even gluten free flour, just no flour. They are chewy, gooey, and sweet. Okay, let’s get baking!

Ingredients

  • 1 cup of natural peanut butter
  • 2 eggs
  • 1/2 cup of brown sugar
  • 2 tablespoons of agave
  • 1 tablespoon of melted coconut oil
  • 2 teaspoons of vanilla
  • 1/2 teaspoon of baking soda
  • about 1/4 teaspoon of salt
  • 1/4 cup of oats, chocolate chips, and M&Ms
  • reserve a few M&Ms and chocolate chips for the top

First, set the oven to 350 degrees and line a 9×9 pan with parchment paper. I used this brand new Costa Nova pan that I got for Christmas – yes, it took me almost 6 months to use it!

Then, mix the first 6 ingredients together until they’re well combined. Then add in the baking soda and salt.

Mix in the oats, chocolate chips, and the candy. Stir gently.

Then, press into the baking dish and top with the extra goodies.

Bake at 350 for 18-22 minutes – you want the centre to have some gooeyness to it.

Once it’s done, take out and let it cool.

Once the bars have cooled off for about an hour or so, then it’s ready to cut. Yet it looks so perfect as one big cookie in the dish, doesn’t it?

Okay, cut up and perhaps nibble on a few of the crumbs.

That’s it, that’s all. These monster cookie bars are done. Place them back in the dish and serve up. They’re delicious on their own or serve warm (just microwave for about 30 seconds) with a side of vanilla ice cream. They freeze well, yet who wants to freeze these?
