Recipe: Peanut Butter Chocolate Ice Cream Sandwiches
Hot day? Ice Cream Sandwiches are on the way!
Ingredients
- 1 1/3 Peanut Butter
- 3/4 Sugar
- 2 eggs
- 1 tablespoon Vanilla
- Your favourite ice cream – in this case, President’s Choice Chocolate Crunch!
- I sometimes add chocolate chips – you decide.
Set your oven to 350 degrees.
Mix all ingredients and roll into balls – then flatten with a fork.
Bake for 13 minutes at 350 degrees. Keep an eye on them…you don’t want them too soft, otherwise they’ll crumble. Also, be sure to let them cool before you assemble the sandwiches.
Soft cream works best – I just let mine sit on the counter for about 3 minutes before I start scooping. Scoop, scoop (I like this word…)
Eat right away…or
Pack up in parchment paper and freeze for another day!

Peanut butter and chocolate, all rolled up in an ice cream sandwich - yes, please!
