Recipe: Pecan Cranberry Cookies
Like cranberries? Like pecans? These pecan cranberry cookies are perfect for you. Celebrating day 6 of the 12 days of cookies – 1/2 way there! These cookies are a great little afternoon snack with tea or coffee, or just on their own.
Ingredients

- 1 cup of soft salted butter
- 1/2 cup of sugar
- 3 tablespoons of milk
- 1 tablespoon of vanilla
- 1/2 teaspoon of salt
- 2 1/2 cups of flour
- 1/2 cup of chopped pecans
- 3/4 cup chopped dried cranberries
- a bit of extra sugar (optional)
First – cream together the butter and sugar. Mix in the milk, vanilla, and salt. Slowly add in the flour. Stir in the pecans and the cranberries.
Lay the dough on some plastic wrap and shape into a log. Wrap the log up and put in the fridge for about 3 hours. This yields 2 logs the size below.
Unwrap the plastic wrap and slice the cookies. Then roll the edges of the cookies in the extra sugar before baking.
Bake at 375 degrees for about 12 minutes. Don’t over bake – once the bottom edge starts to brown in the slightest they are done.
Cool.
