Day Five!! 12 days of cookies celebration and we’re on day 5. Today, Rocky Road Brownie Cookies…and, they are gluten free!

Ingredients

  • 3 cups of powdered sugar
  • 1/2 cup of finely ground almonds
  • 2/3 cup of unsweetened cocoa powder
  • 1/4 teaspoon of salt
  • 3 extra large egg whites
  • 1 tablespoon of vanilla extract
  • 2 cups of milk chocolate chips
  • 1 cup of chopped pecans
  • 24-36 mini marshmallows

First – sift together all the dry ingredients (the sugar, ground almond, cocoa powder and the salt). Second, in your stand mixer, using the whisk, blend the dry ingredients with the egg whites and the vanilla. Then, gently stir in the pecans and chocolate chips. Put the dough in the freezer for 15 minutes.

Once the dough has chilled, spoon out on to parchment paper or silicone baking sheets. Top with 2-3 marshmallows. Bake at 350 degrees for 12 minutes. Let cool about 8 minutes before trying to remove from the pan.
