Tired of the same old pumpkin pie for fall dessert? Try pumpkin parfait instead!

I made this recipe since I love pumpkin pie and well, my husband loves chocolate…so I thought of this fun way to eat it all in one!

Start with some empty, yet tall glasses and oreos!

Crush up the oreos and put in the bottom – one of my cups has crushed graham crackers (I’m not a big chocolate person). Next layer is the pumpkin pie mix. When I was making the pumpkin spiced bars I made some extra mix and cooked it for 35 minutes at 375. Here’s what you need:

Ingredients

2 cups of pumpkin puree
1/2 cup of sugar
2 eggs
1/2 cup of evaporated milk
4 tablespoons of flour
1/2 cup of brown sugar
1 teaspoon of nutmeg
1/2 teaspoon of ginger
1 teaspoon of allspice
2 teaspoons of cinnamon
2 tablespoons of vanilla
1 cup of chocolate chips
4 oreo cookies
cool-whip

Keep stacking!

For a bit of an extra treat, on top of the pumpkin mix I added peanut butter and chocolate chips. On my non-choclate one, I added skor bits. mmm….

Next, you’ll and cool-whip and then repeat the whole process. It’s messy, but oh, so good!

Less than 9 weeks until the holiday season is upon us again! Good think I have a few long weekends between now and then to get in my holiday baking!
