Recipe: Roasted Parmesan Potatoes
Roasted parmesan potatoes – the perfect side dish to match bbq drumsticks. These potatoes are salty, crispy, and full of flavour. Let’s get cooking!
Ingredients
- bag of baby potatoes
- 2 tablespoons of grape seed oil
- 3 tablespoons of chopped garlic
- 1 tablespoon of Italian seasoning
- 3/4 cup of fresh parmesan cheese
- 2 tablespoons of melted salted butter
- 1/4 cup of green onions
- salt and pepper to taste
First step is to set the oven to 400 degrees on roast. Then, parboil the baby potatoes whole. You want them to boil for about 5 minutes. While they’re boiling get out a sheet pan and spray with oil. Shred the parmesan cheese and lay it down on the sheet pan.
Once the potatoes are done boiling, cut them in half and put them in a bowl and gently toss with the grape seed oil, garlic, seasoning and salt and pepper.
Then, place them cut side down on the sheet pan. Cook for 18 minutes and then use a wooden spatula and scrape up the potatoes.
Then, once you’ve got the potatoes lifted, put them back in the oven for another 7 minutes or so.
Once they’re done, browned and crispy, top with the melted butter and chopped green onions. Serve and eat up.
They do work the next day for lunch, yet they are best served right away out of the oven. So be sure your table is set and the guests are ready to eat.
Thee potatoes are soft and tender on the inside from being parboiled and they are full of flavour and crispiness on the outside thanks to the parmesan cheese and oven on the outside. Be careful, they just might steal the show.
