Recipe: Turtle Cookies
Turtles are a holiday favourite – why not make turtle like cookies!? Celebrating day 9 of the 12 days of cookies with turtle cookies.
Ingredients
- 1 1/2 cups of flour
- 1 cup of cake flour
- 1/2 cup of cocoa
- 1 teaspoon of salt and baking soda
- 2 sticks of salted butter
- 1 1/4 cup of light brown sugar
- 3/4 cup of sugar
- 2 eggs
- a tablespoon of vanilla extract
- 1 cup of chocolate chips and pecans
- 36 caramel candies – or chocolate caramel balls
First – cream the butter and the sugars. Add in the vanilla and eggs. Slowly add in the dry ingredients. Stir in the chocolate chips and the chopped pecans.
Roll the dough into 1 inch balls and then press in the caramel.
This was a bummer – I forgot to buy caramels for this recipe, but I improvised and use the caramel balls I had from the stuffed caramel cookies I made on day 3 of the 12 days of cookies celebration. It worked, but these cookies are far better looking with real caramel candies.
Bake at 350 degrees for 13 minutes. Then let cool a bit and eat up.
Take a plate over to your neighbour…or eat them all yourself!
