Recipe: Mashed Cauliflower

What will go wonderfully well with yesterday’s lamb leg steak? Mashed Cauliflower. Not only is it super tasty, it’s also good for you. This whole dish is 440 calories – way, way better than mashed potatoes!

Eat up.

Ingredients

  • 1 medium cauliflower (about 1.5 lbs)
  • 2 tablespoons of room temperature salted butter
  • 1 teaspoon of minced garlic
  • 1/4 cup of fresh grated parmesan-reggiano
  • 3 tablespoons of 1% milk
  • 1 teaspoon of sea salt
  • dash of pepper

First – wash, trim, and cut up your cauliflower. Steam for about 8-10 minutes.

Use your fine cheese grater and grate the parmesan-reggiano.

Gather the butter, garlic, and the milk.

Once the cauliflower is steamed and still hot, mix all ingredients together into the Vitamix. Blend for about 3 minutes until fully ‘mashed’.

Spoon out into a serving dish and eat immediately!
